Creamy Mushroom Pasta







Home-made Pasta
NOTE: You can also use bought pasta for this recipe
2 eggs
200 g durum wheat flour
2 tea spoons salt

Mix the ingredients and knead into a dough. Wrap in cellophane/kitchen film and let the dough rest for 15 min. Use a pasta machine to make thin sheets of pasta. Cut into the desired shape (on the show, Iikka chose to make tagliatelle). Boil in salted water for approx. 2 minutes.

Creamy forest mushroom sauce
forest mushrooms
2 dl cream
1 shallot onion
2 tea spoons corn flour (or other thickening agent)
1 tea spoon sugar
butter for frying
salt, black pepper

NOTE: if you use dried mushrooms, follow the soaking instructions on the package.

Cut the forest mushrooms into pieces. Cut the onion into small pieces and saute it in butter for a few minutes. Add the mushrooms and fry some water out from them. Add salt and sugar. Take out some of the mushrooms from the pan and use a blender to give them a smooth structure. Add cream and boil for a moment to reduce the sauce a little bit. Add the mushroom pure back into the frying pan. Mix the corn flour with water, add into the sauce, and make it boil (or otherwise use thickening agent according to the instructions). Taste to check the saltiness. Add black pepper.

Optional: You can add herbs and separately fried mushroom cubes as garnish.
